Pu-erh is a unique type of tea –it is made like Green Tea but looks and tastes more like Black. It comes from a large leaf variety of the regular tea plant, camellia sinensis, and has a slightly different chemical composition that allows it to be aged. Some of the most sought after and expensive Pu-erh Tea is between 10 and 50 years old! Also, it is traditionally formed into cakes like the Tuo Cha that you see below. Brewing it is quite simple –just put it in your infuser and pour some hot but not boiling water over it; a single cake will yield several infusions.
